No-Cook Tomato Sauce

Toss vine-ripe tomatoes with garlic, basil and olive oil, let them sit, and they get juicer and juicer.  Spoon over free-range chicken or bison, or simply eat with a spoon.

6 large fresh tomatoes

2 garlic cloves, chopped

3 tablespoons extra-virgin olive oil

1/3 cup chopped fresh basil

1/4 teaspoon sea salt

Coarsely ground black pepper

Chop tomatoes and place in a bowl.  Add garlic, olive oil, basil, salt, and pepper.  Toss gently.  Cover and let stand at room temperature 1 to 2 hours.

1 Cup Extra Virgin Olive Oil

2 Fresh Squeezed Lemons

1 Tsp. Oregano

1 Tsp. Spike Seasoning

1 Tsp. Herbamere Seasoning

Dash of White Pepper
